I very loosely followed this recipe: https://www.recipetineats.com/one-pot-mexican-chicken-rice/. I wanted a lot of veggies so I added a lot of veggies. Bell peppers, tomatoes, corn, carrots, peas, jalapenos, scallions and cilantro.
